Bottom line: good, honest wine made with the blood and sweat of a charming husband and wife team. When we say "honest" we mean that it really speaks for itself because Gianluca and Livia don't use anything to alter it. As he says, "I don't use yeast, or enzymes, or mannoproteins . . . no wood . . . not anything. I don't add anything. I crush the grapes and let them be what they are, what they were in the vineyard." And the result is a textured, concentrated and bright grape-y wine with a hint of tannin and earthiness. It is well balanced and plain old delicious. Phil Conroy, our very discerning distributor, likes to reach for it when he's indulging his fixation for Roman cooking: cacio e pepe, all'amatriciana or grilled lamb. That sounds beautiful to us!

A small husband and wife endeavor Cascina Minella is a labor of love everyday. In 2002 the couple bought the small farmhouse at the top of a very steep vineyard that is now Cascina Minella. They have a vegetable garden on top of the hill with the vines going down the south slope to the road below. The vineyards are too steep for tractors, so the vines are hand pruned and, yes, hand harvested. They use natural fertilizers and no yeasts, enzymes or other chemical manipulations. The vineyards have plenty of grass, little flowers and lots of happy microbial life. This culminates into awesome dolcetto that we get to take home and drink!
