When we opened Central Bottle we knew two things 1. we need wine and 2. we need cheese. And we knew the cheese needed to be local. As we began to grow our concept we set out to buy a house olive oil and as you can see we settled on Olio Taibi. What we never expected was that we would get our local cheese filled with our house olive oil.  That was the inception of the olive oil burratine. Little mozzarella purses handmade by Lourdes and filled with certified organic Sicilian olive oil. Mamma Mia! So good! But you have to stop in and buy some to find out.

LOURDES FIORE SMITH
When Lourdes’s great-grandfather's family came to America from Italy in 1908, they brought generations of Italian cheese making tradition with them. Inspired by her grandfather's gift and longing again for the simple pleasure of eating his handcrafted cheese, she sought out the apprenticeship of the current owner of Fiore's who had apprenticed under her grandfather. The fundamental knowledge that she brought back to Massachusetts is now the foundation of Fiore di Nonno. This is her salute to her grandfather, Joe Fiore, that his family tradition continue and his amazing cheese be shared with many and enjoyed for a long time to come.
