This is Stacey Daley - an amazing cook, former organic farmer and lover of food. We've known Stacey for some time through the organic farm she use to tend and over the years we've had many a tart, fava bean puree or pickled beet from her too. When we decided to hunt down our chef for Central Bottle, Stacey was our first pick and in a crazy turn of fate Stacey would have us too. She's so in tune with her food we swear she was a vegetable in a past life (she says she would want to be fennel). And she adds that extra ingredient that you don't get from just anywhere or anyone - love.
